    1 Whole Rabbit, 1 Cup Olive Oil, 1 Large Onion finely chopped, 1 Glass Dry Red Wine, 1 Tin Diced Tomatoes, 2 Bay Leaves, 2-3 Whole Cloves Cinnamon Stick, 1 Clove Garlic, Salt, Pepper, 1 kg tiny onions.

  • Hare Stew

    Also known as "Lagos Stifado"

    1 Whole Hare, 1 Cup Olive Oil, 1 Large Onion finely chopped, 5-6 ripe tomatoes, 1 clove garlic, mashed vinegar, 1 kg tiny onions.

    6 Quails, 2 table spoons butter, 1 glass white wine, Tin diced tomatoes, 2 cups rice, salt & pepper.

    2 Whole Rabbits cut into serving pieces, Salt & Pepper, Flour, 2 tblsp Olive Oil, 2 Onions sliced, 2 Glove Garlic (minced), 6 Carrots peeled and sliced, 1 lb. Fresh Mushrooms, Sliced, 2 tbs. Fresh Parsley minced, 1/4 tsp Thyme, 1/2 tsp. Oregano rubbed, 4 bay Leaves, 2 Cups Dry White Wine.

    Wild Boar Ragu w/t Rice

    Olive Oil for frying, 1 Onion peeled & finely chopped, 2 Carrots peeled & finely diced, 2 Sticks Celery finely diced, 2 garlic Cloves peeled & finely sliced, Flour for dusting, Salt & freshly ground Black Pepper, 750g Wild Boar chopped into 3cm cubes, 100g Pancetta, 1 bay Leaf, 5cm strip of Orange rind, 375ml Red Wine, 2 tbsp Tomato Puree, 4 sprigs Oregano, leaves picked & roughly chopped.

    Egg Pappardelle w/t Wild Boar & Olive Ragu

    Egg Pappardelle, 50ml Olive Oil, 500g Wild Boar Shoulder cut into 2 cm cubes, 2 Onions diced, 2 Carrots diced, 3 Celery Sticks diced, Sea Salt, 4 Bay Leaves, 4 sprigs of Thyme, 3 Garlic Clovers diced, 20g Tomato Paste, 100ml Red Wine, 200g tinned crashed Tomatoes, Pepper, 100g pitted black Olives, 1 Lemon zest.
